		<description>Just an update on the ginger - I added some as suggested in the final cooking stage. I added about 2-3 inches of finely grated ginger to a mix which started with 1.5kgs fruit. It tasted excellent - ginger really adds a complexity and is quite subtle and spicy. Thanks for your help.</description>

I haven't made marmalade with ginger, but think it would be lovely and tropical. Make sure it's shredded finely, Japanese graters are great. And I think adding it towards the end of the cooking time would be fine.</description>
